It's crunch time. With Thanksgiving only three days away, you have most likely planned out your dishes and started in on some prep work. That prep work really saves the day, doesn't it? In case you are in need of some last minute ideas, here are the Thanksgiving recipes I have posted over the past two weeks. Most of them are fairly easy to make, containing wholesome and traditional ingredients. And they can accommodate most dietary needs.
A Note on Thankfulness:
Thanksgiving is often a busy time for most as we juggle the preparation of several different recipes along with cooking a turkey and perhaps some hosting some house guests. It's easy to overlook the many reasons we have to be thankful. But in light of the recent tragedy in Paris, along with all of the other concerns that surround our world today, it's important to pause and reflect on the good.
As I examine my own life, I can easy grab a handful of things off the top of my head that I am thankful for. My faith, family, friends, and health are at the forefront. None of those things can be bought, and yet they are priceless.
My faith has gotten me where I am today. Through ups and downs, worries and concerns, when facing fears or doubts, and of course in all of the good times, my faith has never let me down.
My family is my rock. My loving and supportive husband- he's my best friend and I thank God for him every day! My boys who continue to make me proud of the fine young men that they have grown to be. One who is well on his way to becoming a fine journalist and my younger son is an honors student in high school with aspirations of either going into the medical field or law enforcement as his desire is to work in an occupation where he is helping people. Fortunately, there is a little time to figure it out, but in the meantime, he landed his first job and we are SO thankful for that! Of course I'm thankful for all of my extended family. We don't see each other often enough but recently I was able to spend some time with many of them. The time we had was special and memorable. Here are some recent family photos:
Good friends are the gems in life that should be treasured. If you have one, consider yourself lucky. More than one, even luckier! There are a few of these gems in my life that I am more than thankful for. They have provided me with their unconditional friendship, love, companionship, advice, support, a shoulder to cry on, and lots of laughs. They've seen me at my worst and celebrated with me during the best of times. These people know who they are and I'm SO THANKFUL for them!
Being thankful for good health is a lessen I learned over a decade ago as I faced a very uncertain situation. It's definitely a story for another time, but not a day has gone by since that period in my life that I don't appreciate waking up each morning and having my health. It made a huge impact on my life and shaped me into who I am today. And as hard as that time was, I wouldn't trade it for anything! Which brings me to my next point of thankfulness and it happens to involve both health and friendship.
One of my dear friends has been battling chronic Lyme disease for close to 4 years. It's crazy when I think about how much time has passed since she woke up one morning and her life would never be the same. Horrendous pain was her worst symptom along with other symptoms. It's a LONG story and one day I hope to share a more in depth look at her remarkable journey. But for now, I want to shout out how extremely thankful I am that she finally found a doctor who knew how to treat her condition and as of today, she is so very close to a pain free life! Such a blessing.
And of course I can't not mention the blog. It has almost been 6 months since the launch of this blog and I have enjoyed every moment of it. Sharing my recipes and other topics with all of you has been a rewarding experience. The countless compliments, comments, and questions have meant a lot to me. So with that said, thank you!
