There are many benefits to making your own salad dressing. First, you know exactly what is in your dressing. In many store bought dressings, you can find a list of ingredients you would rather not consume. Second, you are using fresh ingredients and can adapt the taste to your liking. Third, you can prepare your dressing in minutes. Really, I could go on and on. But instead, let me tell you what I like about this dressing.
The avocado gives it a nice creaminess, not to mention all of the health benefits associated with avocados. I use local, raw honey for the sweetener. The apple cider vinegar and lemon provide the tang, and the cilantro adds a nice herbal flavor. It can be whipped up in no time flat and stores well in the refrigerator for a good week in an airtight container.
Besides a salad, this dressing can be a fantastic alternative for a sandwich spread, on a hamburger, as a dip for some fresh veggies, or even as a topping on some of your favorite meals. You can also adjust the sweetness level by increasing or decreasing the amount of honey you use. So you might want to start off with one tablespoon and gradually increase by a tablespoon or two if needed. I find that 2 tablespoons works best for my family. This recipe makes 2 cups of salad dressing.
1 avocado, peeled and pit removed
2 Tbs lemon juice
2 Tbs apple cider vinegar
1-3 Tbs local, raw honey (depends on your sweet preference)
2 Tbs olive oil
1/2 cup filtered water
1/4 cup cilantro
1. Place all ingredients into your high speed blender and blend until smooth.
2. Taste to see if you want to adjust your flavors.
3. Enjoy on a salad or whatever you desire. Store in an airtight container in your refrigerator.
