This sweet cashew cream is simply delicious! It can be used in a variety of ways and on numerous things from fruit to baked goods. Honestly, it is so good I can just enjoy it right from a spoon!
You can play around with the flavors as well. For example, you can add a little bit of fruit to it to give it some flavor, or even some spices to jazz it up. Other than a few hours to soak your cashews, it literally takes minutes to whip up in your high speed blender. Super easy!
1 cup raw cashews, soaked for 4-6 hours
1/2 cup filtered water, more or less depending on thickness
1 Tbs maple syrup
1/2 tsp vanilla extract
1 Tbs lemon juice
pinch of sea salt
1. Drain and rinse your soaked cashews. Place all ingredients into your high speed blender and blend until smooth. Start of with about 1/4 cup water and gradually increase to your desired thickness. Makes about 1 1/4 cup of cream.
