I think most people will agree, it's hard to top a nice summer day. There's just something about the shining sun, getting out and enjoying the outdoors, and absorbing those relaxing, stress free moments. Do you ever wonder why summer days feel like that? There are probably different reasons for many of us. For me, I think it brings me back to my childhood. Those days of no school, running around the neighborhood without a care in the world, playing with friends, chasing down the ice cream truck, running through the sprinkler, lots of swimming, and enjoying being a kid.
As a parent, summer days are still wonderful. But there are some evenings, when it's time to think of what to prepare for dinner, I wish I was a kid again and dinner wasn't my responsibility. Who's with me on that? That's when it is helpful to have those easy and refreshing meal ideas that will keep you from standing over a hot stove for an hour. With three guys in the house, you can imagine the reactions I get when I'm asked what's for dinner and I respond with a salad. Not exactly what guys want to hear. But this salad is not only flavorful, but it also has a good portion of protein and a variety of texture. It truly leaves you feeling satisfied in a healthy way.
The only cooking required is grilling some chicken breasts. You can even do that ahead of time to make dinner even easier. We really enjoy my Dijon Vinaigrette Dressing with this salad. The flavors are outstanding together!
3 chicken breasts, grilled (approx. 1 pound)
3 cups arugula
3 cups red leaf lettuce (or greens of your choice)
1/2 cup cherry tomatoes, halved
1 cup organic bluberries
1/3 cup slivered almonds
1/4 goat cheese feta (or cheese of your choice) *optional
1. Grill chicken breasts. Slice the chicken into your desired sized pieces.
2. Wash the arugula, lettuce, tomatoes, and blueberries thoroughly. Chop the lettuce and slice the tomatoes. Place all ingredients in a large salad bowl. Top with almonds and goat cheese feta.
3. Prepare your salad dressing and add to the salad right before serving.
