When I'm in need of a simple but flavorful side dish, I often make this herb butter basmati rice. It has a nice blend of herbs to make it unique. At the same time, it doesn't overpower what you serve it with. It compliments most fish and poultry dishes nicely and within about 30 minutes, you will have a simple side that will please even picky eaters.
1 cup uncooked basmati rice
1 3/4 cup water
2 Tbs grass-fed butter, divided
2 Tbs fresh flat leaf parsley, minced
1 Tbs shallots, minced
1 Tbs chives, minced
1/2 tsp salt
fresh ground pepper, to taste
1. Rinse your rice well and place in a medium saucepan. Add the water and one of the tablespoons of butter.
2. Bring to a boil over high heat. Stir once before reducing the heat to low. Simmer for 15 minutes. While your rice is cooking, prepare your herbs and spices.
3. Remove the pan from heat and let sit for another 10 minutes. When your 10 minutes is up, stir in the remaining tablespoon of butter. Then add the parsley, shallots, chives, salt, and pepper. Mix the ingredients and serve. Makes about 4 servings.
