This week marks the beginning of fall. That seems so crazy to me. But as I examine my life, the writing is on the wall for sure. In my house, it's all about college football, pro football, and one more thing, time for my oldest son to go back to college. I love that he is able to spend the summers with us. I remember when he first left for college three years ago, the house just didn't seem quite right. His room was stagnant, the house was quieter, the laundry loads were lighter (that was actually a good thing), and there was just an uneasiness because of our family being separated. The uneasiness soon dissipated as we saw him thrive and flourish in his element. As a mother, I honestly couldn't have been more proud of how well he adjusted.
One week from today will mark the beginning of his senior year. Lately, my thoughts consist of what his future holds when he graduates. He is a man of many strengths and excellent qualities. And this I know for sure, he will succeed at whatever it is he puts his mind to. I have thoroughly enjoyed watching him learn, grow, and mature into such a fine young man over these past 21 years.
Okay, enough of the mushy stuff. This week I need to be strong, and not only that, but highly organized. I've been making my list of things to pack, things he needs in his apartment, grocery lists, and of course, making all of the homemade goodies he enjoys most. I like to fill his refrigerator will things that will remind him of home. And I make him all of his favorite meals right before he leaves. It's my last chance to spoil him before he is once again on his own. Oh my gosh, am I getting mushy again? So as you can see, my week is pretty full. No time to waste, no time to spare. So my mornings will be starting with something quick and easy like my Apple Cinnamon Smoothie recipe.
Apples have to be among my top five favorite fruits. Oh sure, I could rattle on about their awesome nutritional qualities, but you already know all of that. You know what I like about them...they are dependable. We can always count on finding a fresh apple at the grocery store. They always find a way to fit into our recipes no matter what season it is. They comes in many varieties and each variety having it's own distinct flavor.
For most people, starting their day with a nutritious breakfast is important. Making an entrance...the apple. Whenever I begin my day with an apple, I feel like I get such a clean start. They are just so refreshing. That's why I find this smoothie to be in my regular breakfast rotation. To get a good dose of protein and fiber, I use some almond butter. Adding 1 tablespoon of grass-fed gelatin is another source of protein along with chia, flaxseed, or hemp seeds for another boost of nutients. I also include half of a frozen banana but dates work well too. Just note, if you use dates, you may need to increase your ice cubes to your desired thickness. This recipe serves 1 but can easily be doubled for 2 people.
1 cup homemade almond milk (or milk of your choice)
1 organic apple, peeled and sliced into chunks (I used honeycrisp but use whatever you enjoy)
1/2 frozen banana (or 3 dates)
1 Tbs almond butter)
1 Tbs gelatin
2 Tbs ground chia, flaxseed, or hemp seeds
1/2 tsp ground cinnamon
1/4 tsp ground cloves
1/4 tsp ground nutmeg
1 cup of ice cubes
1. Place all ingredients into your blender and blend until smooth and you have reached your desired consistency. Drink immediately.
