Carrots are one of the most widely used vegetables. They are well loved by most which makes them a safe serving choice, but they are also rich in nutrients and have ample clout when it comes to its health benefits.
Carrots ward off heart disease as they are a natural cholesterol reducer. Because they are rich in potassium, carrots are an excellent way to lower blood pressure. So if you feel yourself becoming overwhelmed or stressed out, grab a carrot! They offer a great boost to the immune system and are rich in Vitamin C. That's exactly what we need this time of year when cases of the flu and colds are on the rise. Due to their dietary fiber, these colorful root vegetables are also a helper to our digestive health. Probably most commonly known is their benefit to our eye health thanks to a healthy dose of Vitamin A.
Carrots are known to be quite versatile in the kitchen as they pair well with a number of dishes. And better yet, they are fairly simple to cook in a variety of ways. 2 1/2 pounds carrots
1 Tbs coconut or olive oil
1 tsp turmeric
1/2 tsp coriander
1/2 tsp sea salt
1/2 tsp cinnamon
fresh ground pepper, to taste
fresh parsley, to garnish
1. Preheat oven to 425°F. Line a rimmed baking sheet with parchment paper. Wash the carrots and dry thoroughly. Peeling is optional.
2. In a small bowl, blend the spices. Rub the carrots with either melted coconut oil or olive oil. Then rub in the spices.
3. Place the carrots on your baking sheet. Bake for 20-30 minutes, or until the carrots are fork tender (not too soft though).
4. Arrange on a serving plate with some fresh parsley.
