Here we are again. Saying goodbye to another year in disbelief over how fast it flew. Every Christmas, my husband faithfully buys me a calendar (yes, the old fashioned kind). And before the new year hits, I take a few minutes to reflect on each month and look at the events that took place in our lives. Then I transfer important dates, like birthdays and anniversaries, onto my new calendar.
As I repeated my annual ritual for 2016, I was quickly reminded of the many milestone events that took place. This may seem super silly to you, but it's been quite a big deal in our house as we have no pets. I'm talking about our pet Betta fish Charlie. He actually belongs to my younger son, but Charlie is loved by all of us. We even got him his own Christmas stocking this year with his name embroidered on it! And yes, Charlie got presents. He is seriously the most amazing fish ever! Sometime soon I will tell you more about how this red finned fellow continues to charm us!
Another big event was my older son's graduation from the University of Oregon. That was a day I will never forget. To think of all he has accomplished and how he has always maintained his integrity and strong work ethic, I couldn't be more proud! Then off he went to start an internship over the summer where he not only gained valuable work experience, but he also met some amazing people that will be part of his life forever. From there, he landed his first job as a sports writer and he continues to soar in his field. This kid is amazing!
Our younger son is pretty special as well. He's just one year away from his senior year, but he shows maturity beyond that. This year, he became part of the National Honor Society as well as being elected junior class president. He is really putting forth great effort into his education and is eager to properly prepare himself for college as well as his future in general. He is still focused on getting into law enforcement so he will likely be studying criminal justice, unless his interests change. And that could very well happen as most teenagers are still figuring out what career path suits them best. So we well see.
My husband and I did more traveling without the boys this year than we ever have before. Now that our nest is half empty, we are finding we have more of those opportunities and I have to say, it has been a lot of fun! Of course I still love traveling with my babies, but as their lives change shape, mine does too. So I guess you could say this year has definitely been about embracing change.
We have also experienced some dietary changes, mostly involving my husband's needs. That has been quite a learning experience, and not an easy task I might add. But I've embraced it and we have adapted just fine. It's funny how often times when something new presents itself to you, it can appear like a huge mountain that is impossible to climb. But as time goes on, you gain some wisdom and understanding, and more importantly, the willingness to change, good things can come from it. I feel like that is where we are at with it.
And while the blog has been a huge creative outlet for me, as well as being an opportunity to share some good stuff with all of you, it has also come with challenges. Nothing earth shattering, just continuing to find balance and trying my best to accept my limits as to how much I can actually do, compared to how much I want to do. I have appreciated your continued support. For all of you who have taken the time to try my recipes, read my posts, offer your encouragement, and share your success stories, that means the world to me. After all, that is why the blog was created in the first place. I'm excited to see what 2017 has in store for the blog as my mind is already full speed ahead thinking of various ideas and recipes to share. So as we say goodbye to another fabulous year, I thought it only be appropriate that I acknowledge some of your favorite recipes from 2016. Here are the top three from Too Precious For Processed.
It's easy for me to see why you guys loved those recipes so much. They are some of my family's favorites as well. There are many more delicious things to come in 2017! I'm looking forward to it. So from my family to yours, Happy New Year! We are wishing you a healthy, happy, and prosperous one.
