The fresh taste of ripe tomatoes, avocados, and cucumbers is a magnificent combination. And of course summer is the perfect season for this trio. Mixing these favorites along with a few other basic ingredients gives you a nice salad that is sure to complement several of your favorite meals.
Whether you are grilling steak, chicken, or seafood, this salad is sure to be a hit! I prefer using Roma tomatoes due to their firm flesh, low juice content, and fewer seeds. It just makes for a better salad mixture in my opinion. You could use other varieties of tomatoes as well. And depending on what is ripe and available to you, another type of tomato may be your only option. If this is the case, you could always scrape out the seeds.
Cucumbers are not only refreshing and low in calories, but they also have anti-inflammatory properties, are high in antioxidants, and have cancer fighting benefits. This is largely due to the flavonoids, lignans, and triterpenes, found in cucumbers. A good amount of Vitamin K is another benefit.
Of course you all know about the mighty avocado. The healthy fats found in an avocado make it easy for us to absorb the carotenoids they offer. That is great news when it comes to maintaining good cardiovascular health. So not only are you gaining some pretty valuable nutritional benefits from this salad, but it's very easy to prepare. That is why it is one of my family's summer favorites.
1 pound Roma tomatoes
1 cucumber, 1/4 inch sliced and quartered, skin on
1/2 cup red onion, chopped
2 avocados, diced
2 Tbs olive oil
1 lemon juiced, about 2 tablespoons (or lime)
1/4 cup fresh parsley, chopped
sea salt, to taste
fresh ground pepper, to taste
1. Combine all of the tomatoes, cucumber, onion, avocado, and parsley in a bowl. Drizzle with the lemon juice and olive oil. Gently toss. Then add the salt and pepper. Gently toss and serve. Makes 4-6 servings.
