I would say ice cream was one of my biggest addictions prior to eating clean. And my idea of a bowl of ice cream was about 2 cups worth! Every night! Yeah, pretty pathetic I know. But over time I have come to realize that my need for ice cream was more of a mind over matter issue. Once I made the commitment not to buy it, I didn't miss it. That is until I found a way to make ice cream with wholesome ingredients.
With the warmer weather approaching, there is just something so refreshing about a scoop of ice cream any time of day. And when I am in the mood for chocolate, this is my go-to. Perfectly shaved chocolate gives this ice cream a delicate crunch that you can't resist!

Another bonus is that this chocolate ice cream is dairy free. And even if you don't need to eat dairy free, you will still enjoy it. Make sure you have some canned full fat coconut milk and raw cacao powder on hand. If you don't have an ice cream maker, you can still make this, but it may not be as creamy. You can mix the ingredients up in a bowl or throw everything into your blender (minus the chocolate shavings) for easy mixing. Stir in the chocolate shavings and then put the mixture in an airtight container. Place it in your freezer. It will take several hours to ripen. However, with the use an ice cream maker, you will be able to enjoy this right away and have an end result of creamier ice cream.
2 cans full fat coconut milk
1/2 cup raw cacao powder
1/2 cup raw organic honey
2 tsp vanilla extract
1. Place all ingredients in a bowl (except for chocolate shavings) and mix well or put everything into your blender and blend well.
2. Pour mixture into your ice cream maker and follow the manufacturers instructions. add the shaved chocolate during the last couple minutes of churning. If you don't have an ice cream maker, add the chocolate shavings to the ice cream mixture and put into a freezer safe airtight container. Store in your freezer for approximately 6 hours.
