I used ground basil and artichoke chicken sausage for this particular dish, but I have tried ground chicken chorizo sausage for a bit of spice and have also used ground chicken apple sausage for a sweeter approach. You can also omit the sausage if you are looking for more of a vegetable based egg dish. Just bump up your veggie measurements or add others for a wider variety of flavors. Again, that's the beauty of this recipe, so many options.

3/4 pound ground chicken sausage
1/2 cup onion, chopped (yellow or red)
1 medium green bell pepper, finely chopped
1/4 tsp paprika
1/2 tsp garlic powder
sea salt, to taste
fresh ground pepper, to taste
Fresh chives, minced
1. Brown your sausage over medium heat and drain any fat or juices from the pan.
2. Preheat your oven to 350°F. Either line your muffin pan with liners or grease with coconut oil to prevent sticking.
3. Whisk the eggs in a medium bowl. Add the paprika, garlic, sea salt, and pepper. Whisk again. Then add the sausage, bell peppers, and onions. Mix well.
4. Fill your muffin cups 3/4 full with the egg mixture. Bake for 20-25 minutes, or until the center is firm.
5. Remove the egg muffins from the pan and top with some fresh parsley, chives, and avocado slices. Makes 12 breakfast muffins.
