If you are still firing up your grill as we close out summer, shrimp is an easy way to get some protein and health benefits. It can be a light and healthy meal depending on the preparation. This recipe is so simple as it involves 5 basic ingredients.
Shrimp contains a good amount of omega-3 fatty acids as well as being an excellent source of iron, zinc, and copper. Those three minerals are beneficial for our cell membranes and healing wounds. Selenium is another key nutrient in shrimp. Selenium has shown to slow the growth of cancer cells and repair DNA. Shrimp is rich in Vitamin B-12 which aids in maintaining a healthy nervous system. So as you can see, shrimp offers several health benefits which gives us another reason to throw some on the grill!
Seafood is often times a crowd favorite, so chances are you will impress your family and friends with this simple, easy recipe that won't cause you a bit of stress. I buy my shrimp fresh, straight from the seafood department where I can always find it peeled and deveined. It's such a time saver! Pair this grilled shrimp with my Cucumber, Tomato, and Avocado Salad and you have yourself a healthy, light, and satisfying way to enjoy a summer meal!
2 pounds large wild caught shrimp, peeled and deveined
1 Tbs minced garlic
3 Tbs olive oil, divided
1 Tbs fresh parsley, minced
1 tsp paprika
lemon wedges for serving
1. Peel, devein (if it hasn't already been done), and rinse your shrimp in cold water. Pat dry and place them in a bowl and coat them with the garlic, 2 Tbs olive oil, parsley, and paprika. Allow them to marinate for 30 minutes minimum. Longer is okay.
2. If you are using wooden skewers, soak them in water for 20 minutes or so to prevent them from potentially catching fire on the grill. Prep your grill for the shrimp, making sure you are grilling these shrimp on some medium-high heat.
3. Once your shrimp has marinated, place them on the skewers and give them one more drizzle of olive oil with the remaining tablespoon.
4. Place the skewers on the grill and allow them to cook for about 2-3 minutes on each side. Be cautious not to overcook these little guys. They will be nice and pink when done. Drizzle with some fresh lemon juice and enjoy! Serves 4-6.
