This month has gone by so fast! I can hardly believe we are in the last full week of February. When I ponder on the concept of time, I become keenly aware of how fleeting it is. In some ways, I feel like I am carefree and in my 20's! But then I reel through the years in my head, think of all that I have been through in life, and then of course look back at photos of then and now, and let's just say it becomes obvious of how much time has passed. It's a great reminder to make the most of our days and the time we share with those around us.
Here in the Pacific Northwest, the past few days of February have been delightful. The sun is shining and the highs are hovering around 60°- what more could we ask for? Especially since we still have a few more weeks of winter!
Speaking of winter, often times we gravitate towards warmer breakfast ideas. But smoothies still play a huge part in my weekly rotation. Or in this case, a smoothie bowl. As a matter of fact, making smoothie bowls are a great way to enjoy some of the winter fruits that can easily be overlooked.
The base of this smoothie is made up of banana and mango, along with some grass-fed gelatin, chia seeds, and nut butter for a protein boost. It's great for a post workout meal! Refreshing too! The fruit you use to top it off with are entirely up to you. I enjoy using some winter citrus and the possibilities are many! From blood oranges, mandarins, clementines, or kumquats, all are great additions. Kiwi is a perfect seasonal option as well and is a complement to citrus.
Sprinkle your smoothie bowl with some coconut flakes, bee pollen, granola, chopped nuts, flax, chia, or hemp seeds. Whatever the case, it will be delicious!
1 frozen banana
1/2 cup frozen mango
1 Tbs chia seeds
1 tsp fresh grated ginger
1/2 tsp ground turmeric
1 Tbs nut/seed butter of your choice
1 Tbs grass-fed gelatin (optional)
1 cup ice
Seasonal fruits (winter citrus, kiwi, etc.)
Unsweetened shredded coconut (toasted or raw)
1. Place the ingredients in the order listed into your high speed blender. Gradually add the ice until your desired thickness is reached. Blend until smooth.
2. Add your desired toppings and enjoy immediately. Makes one smoothie bowl.
