Welcome to my new addiction...these tasty little coconut chips. Once you try them, you will be hooked too! First let me clarify the meaning of "chips" here. In the world of shredded coconut, coconut chips refer to the larger flakes. So don't think of them as actual chips as in potato chips. Speaking of potato chips, you know how it's pretty much impossible to only eat one chip? Well, these guys are the same way. Good news though, they are healthy!!!
You know how I love my turmeric, right? Naturally, I wanted to include one of my favorite healing spices in this recipe. When paired with some Garam Masala, it's like WOW! If you are not familiar with Garam Masala, it is commonly used in Indian and South Asian cuisines. Garam means "hot". But not spicey hot. Hot as in it warms the body. Masala means a blend of spices. It certainly is just that! Recipes for garam masala will vary, but typically they will include cardamom, cinnamon, cloves, cumin, black pepper, and coriander. A touch of some maple syrup is added in preparing the coconut chips and that's when you know this is going to be some seriously flavorful coconut.
The coconut chips make a fabulous snack on their own. But you can also add them to a ton of things! Try them on your morning oats, chia pudding, salads, ice cream, yogurt, with some granola, nuts or seeds, smoothie bowls, I mean seriously, the list goes on and on...
One thing I can guarantee you, they won't last very long. So make sure you have someone to share these flavorful coconut chips with, or be prepared to devour them on your own.
1. Preheat oven to 350°F and line a baking sheet with parchment paper.
2. Place the coconut chips in a bowl or large Ziploc bag. In a separate bowl, mix the coconut oil, maple syrup, and spices. Then pour the the mixture over the coconut chips to thoroughly coat.
3. Spread the coconut chips in a single layer on a baking sheet and place in the oven.
4. Stir the coconut chips around every 5 minutes to evenly roast for a total of about 20 minutes, or until they are browning and crispy. They will crisp up a bit more when cooling. Store in an airtight container and enjoy!
