These bliss balls are an excellent choice for a little pick me up in the afternoon or an evening treat. Being that they are full of healthy ingredients and nutrients, not to mention extremely delicious, I like to have a variety of these on hand. They are the perfect size to pop in your mouth and enjoy. Currently, these matcha mint bliss balls are my favorite flavor. If you are a fan of mint chip ice cream, you are going to love these! I didn't think about it at first, but my youngest son was my recipe tester for this flavor and when he tried one for the first time, he said they reminded him of eating ice cream. I immediately popped another one in my mouth and my goodness, he was right! Since you store them in the refrigerator, they are cold when you eat them. That, coupled with the mint flavor, and the texture, you will honestly feel like you are enjoying a mini scoop of ice cream. Yummy!
1 cup raw cashews
1/2 cup unsweetened shredded coconut, plus more for rolling
1/2 cup packed, pitted dates (soak in water to soften if necessary)
2 tsp peppermint extract
2 tsp matcha green tea powder
1 tsp water
1. Place all ingredients into your food processor and mix thoroughly. You want the mixture to still have some texture, so not pasty. But it also needs to have a slight stickiness to it so you can successfully form the mixture into balls. If it seems to dry, add a touch more water.
2. Roll the mixture into 1 inch balls and roll into shredded coconut if desired. Store in your refrigerator. Makes 12-14 bliss balls.
