1 & 1/2 cup pistachio flour
1/3 cup coconut flour
1 tsp baking soda
1/2 tsp sea salt
1/2 tsp cinnamon
1/2 tsp nutmeg
1/4 cup grass-fed butter or coconut oil, melted
1/4 cup maple syrup
1 cup rhubarb purée
1 Tbs fresh lemon juice
garnish with chopped pistachios
1. Preheat oven to 350°F and line a loaf pan with parchment paper.
2. In a medium bowl, mix the dry ingredients. In a large bowl, mix the eggs, butter or oil, maple syrup, rhubarb purée, and lemon juice.
3. Mix both the wet and dry ingredients together and stir until combined.
4. Pour the batter into your loaf pan and sprinkle with some chopped pistachios. Bake for about 1 hour. Allow to cool, slice, and enjoy.
