Bliss balls are that perfect, snack-sized little treat. Just right to enjoy in a bite or two. They pack quite a punch when it comes to flavor and nutrition. Bliss balls can be made in just about any variation of flavors you can think of. So if you are into bliss balls, you know you need one with some chocolate substance!
I made these chocolate pistachio bliss balls because they are two of my family's favorite ingredients. Chocolate and pistachios mixed together have just the right balance between sweet and savory. The ingredient list is short and sweet. Just the way we like it, right? I did incorporate some cashews into the mix as well. But if you want to go all in with pistachios, you can do that too.
After you roll the mixtures into pretty little balls, you can roll them in finely chopped pistachios, cacao powder, or a mixture between the two. They are delicious both ways!
1/2 cup raw cashews
1/2 cup raw or roasted pistachios, unsalted, plus more for rolling
1/2 cup pitted dates
4 Tbs raw cacao powder, plus more for rolling
2 Tbs raw cacao nibs
1 Tbs water
1. Place the cashews and pistachios into your food processor and pulse to break down a bit. Then add the rest of your ingredients (except for the water) into your food processor and pulse until well combined with a coarse texture. If the mixture seems to dry and won't stick together, slowly add the water a little at a time.
2. Once your mixture has a nice "stick" to it, roll the mixture into balls. You can then roll the balls into some chopped pistachios, cacao powder, or leave them plain. Makes about 12 balls. Store in the refrigerator.
