As a matter of fact, you can see by the short and simple list of ingredients, there isn't a lot involved in making these flavorful pops. One thing I would encourage is to buy organic peanuts and organic peanut butter. Peanuts are known to be heavily sprayed with pesticides. And even though they have a shell, it is soft and porous which allows the pesticides to easily penetrate.
These popsicles are the perfect warm weather treat for the whole family! You will love the creaminess of the peanut butter popsicle, and the crunch of the chocolate shell and peanuts. If peanuts don't make the cut for your dietary needs, you can most definitely swap out the peanut butter for sunbutter. It makes a fantastic alternative!
1 can full fat coconut milk
1/2 cup organic peanut butter
1/4 cup maple syrup
1/2 cup chocolate chips
1 Tbs coconut oil
Chocolate Chips or Cacao Nibs
1. Place all of the popsicle ingredients into your Vitamix or high speed blender. Once smooth, pour the mixture into your popsicle molds and freeze for a few hours.
2. Once frozen, melt the chocolate chips and coconut oil over low heat in a small saucepan. Once melted, drizzle or dip the popsicles with the chocolate and immediately sprinkle the peanuts and/or chocolate chips over the chocolate drizzle. Work quickly because the chocolate hardens fast.
3. Enjoy right away or freeze for future eating. On average, this recipe will make about 5 popsicles if your popsicle molds hold about 4 ounces of liquid.
