Most of us have enjoyed the delectable pairing of sweet and savory from time to time. I'm going crazy over here thinking about the numerous dynamic possibilities! I love chocolate paired with nuts in pretty much any form or combination. And there is just something so irresistible about salted caramel, don't you think? Do you have a favorite sweet and savory snack or dish?
If you are like me and enjoy those sweet and savory combinations, this is a great salad that just might make the cut for your next summer side dish. Using cherries when they are at their peak is always a treat. Quite often we are using them to make pies or crisps, and of course implementing them into our morning breakfast or afternoon snack. That's one of the reasons I love this salad. It's a different approach to cherries, but at the same time, can be paired with a variety of things.
For example, this salad goes well with just about any meat selection you can think of. From steak, to chicken, to fish, this salad makes a delicious side dish. Even those simple burgers and hot dogs love a good cherry salad on the side! It also makes a fabulous vegan dish on its own. As a matter of fact, I wanted to mention that this recipe includes the use of greens. But to be honest with you, if you want to omit the greens and just use the cherries as the core of your salad, that is totally acceptable. You are getting the heart of the flavor right there. It really just depends on what type of side dish and presentation you are looking for. So keep that in mind.
Another bonus with this salad is the short and simple list of ingredients. Greens, if you decide to use them. Cherries, mint leaves, and chopped pistachios make up the rest. The dressing is very simple. You can use either maple syrup or honey as the sweetener. Honey will give you a slight edge in the sweetness department, but both choices work great. You can always adjust the ingredients to your taste preference.
This summer, I hope you get a chance to try this sweet and savory seasonal salad. It's a huge hit with us and I'm sure it will bring the right hint of summer into your meals.
1 bunch of greens (I used red leaf butter lettuce)
2 cups dark, sweet cherries (pitted and halved)
2 Tbs fresh mint leaves, cut in chiffonade, plus more for garnish
1/4 cup chopped pistachios (raw or roasted, your choice)
2 Tbs lemon juice
1 Tbs maple syrup or honey
1 Tbs shallot, minced
1 Tbs olive oil
sea salt, to taste
fresh ground pepper, to taste
1. In a small bowl, combine all of the dressing ingredients and whisk until combined. Set aside.
2. Chop greens and arrange them on your serving plate. In a medium bowl, toss the cherries with the dressing. Gently add in the mint leaves and pistachios. Then arrange the cherry mixture over the greens. Sprinkle any extra mint leaves and pistachios that you may have left over on top of the salad. Makes 4 servings.
