It's all about popsicles here and it's hard to beat a good homemade version. As a matter of fact, once you get into the habit of creating your own, you will wonder why you ever bought them at the store in the first place. Homemade popsicles are hands down way more flavorful and healthy. Not to mention the fact that you can control your ingredients and know what you are eating.
Another neat thing about do-it yourself popsicles is all you need is popsicle molds, some creativity, and you can bring to life any flavor combination your heart desires. So of course you know what that means...a mint and chocolate version! It's another fabulous way to enjoy mint and all of its benefits. You will even get a small dose of spinach in these treats! And no, you can't taste the spinach. So for all of you green haters, just relax, okay?
If you are looking for a good place to pick up some popsicle molds, Amazon has several choices. The chocolate drizzle is completely optional but highly recommended. Because who doesn't love mint and chocolate? You can control the powerful flavor of mint by either using one teaspoon or two of the peppermint extract. I am a total nut for mint but I realize some of you prefer a more subtle mint flavor. If you fall into that category, stick to one teaspoon of peppermint extract. One thing to keep in mind though is the flavor is toned down during the freezing process.
1 can full fat coconut milk
1/2 cup mint leaves
1/2 cup packed baby spinach
1-2 tsp peppermint extract (to taste)
1/4 cup maple syrup
1/2 cup chocolate chips
1 Tbs coconut oil
1. Blend all of the popsicle ingredients in your Vitamix (or other high speed blender).
2. Pour the mixture into your popsicle molds. Place the molds in the freezer for a few hours, or until solid.
3. Once the popsicles are frozen, melt the chocolate chips and coconut oil in a small saucepan over low heat.
4. Once the chocolate is melted, drizzle it over the popsicles, or dip the popsicles into the chocolate. Return the popsicles to the freezer to reaffirm their solid state, then enjoy!
