Are you feeling the fall vibe yet? This week it has finally hit me. The temperatures are cooler and I’m grabbing soft, cozy blankets, my slippers, and trading in those iced coffees for a mug of hot tea. Yep, I’d say fall has arrived.
Of course that means a new variety of crops have arrived as well. Figs for starters, are in abundance. You know I’m a sucker for those soft, sweet fruits! And pears. I think pears are totally underrated. Similarly, I feel the same way about apples. When they are at their peak- wow! I think it just goes to show you how much joy even the simple things in life can bring.
So I wanted to share with you one way I love to enjoy some of my fall faves. In a fruit salad! This has to be one of the easiest ways to combine a variety of fruit that is appropriate for several occasions. Fruit salad is great for breakfast, snacking, a healthy dessert, or even a fabulous side dish. You can scale the recipe up or down to suit your needs. I love the toasted almonds in this recipe for their added crunch and savory flavor. Fresh mint leaves also bring a nice touch to this dish.
I made a very simple dressing you can toss the fruit in if you desire. But honestly, if you buy your fruit at their peak, you will find their natural flavor and sweetness can stand alone. You probably recall I mentioned apples earlier in my post, you can easily swap the pears out for apples if you prefer. Quite honestly, this is one of those recipes with no hard, fast rules. So if you are finding some other delicious fruits to add or swap, go for it! You can’t go wrong with any of these nourishing and pure sweets.
3 pears, peeled, cored, and diced (I used red bartlett)
1 cup fresh figs, sliced into 4 or 6 wedges (I used black mission figs)
1/4 cup fresh pomegranate seeds
2 Tbs fresh mint leaves, cut in chiffonade
1/4 cup sliced almonds, toasted
Juice from one lime
1 Tbs maple syrup or honey (optional)
1) Line a small baking sheet with parchment and toast the almonds at 350°F for about 5-7 minutes. Check on them frequently and stir them around to avoid burning. Remove and cool.
2) Peel, core, and dice the pears. Slice the figs and remove the stems. Slice into a pomegranate and remove the seeds. Cut the mint leaves.
3) Place the diced pears into a large bowl or serving dish. Toss them with the lime juice and maple syrup or honey. Then add the figs, pomegranate seeds, and mint leaves. Gently toss. Top with the roasted almonds and serve.
