Cardamom is such a unique and distinct flavor. It is a spice that comes from the seed pods of various plants in the ginger family. No wonder I love it! There are two main types of cardamom, green and black.
Cardamom is used frequently in Indian cooking. It's commonly used in preparing rice and curry. Middle Eastern cuisine uses cardamom often times in their desserts. One thing is for sure, when used properly, this spice shines! Whether baking, cooking, or sipping on a drink, cardamom can easily find its way into a variety of delicious recipes.
Since I love cardamom and ice cream, it was time we celebrate the two in one bowl...or scoop or cone. I have to say, the finished product is amazing! We polished this ice cream off quickly! The flavor goes well with many types of fruit and other desserts so it's a great complement to a variety of things. We enjoyed my plum compote recipe with this ice cream and it is an outstanding combination!
Another thing I love about this flavor is it can be enjoyed all year long. Cardamom has that warming spice taste, so it easily goes well in cold weather. At the same time, it pairs nicely with some warm weather favorites. So check out this easy and delicious ice cream recipe. No doubt it will be a quick favorite! *Just a little note about the ingredients... you can omit the cashews if you want. The cashews add a bit of rich and creaminess to the ice cream though, so keep that in mind :)
2 cans full fat coconut milk
1 cup raw cashews, soaked 4 hours, rinse well (optional, see note below)
2 Tbs blackstrap molasses
1/4 cup maple syrup (honey, coconut nectar work too), adjust to your preference
1/2 tsp ground nutmeg
2 & 1/2 tsp ground cardamom
1 tsp vanilla extract
*Note: You can omit the cashews if you want. The cashews add some rich and creamy characteristics to the ice cream though, so keep that in mind.
1. Place all ingredients in your high speed blender and blend until smooth.
2. Transfer the mixture to your ice cream maker and follow manufacturers instructions.
3. Place ice cream in a freezer safe container with an air tight lid. Enjoy!
