So it's fall, it's the holiday season. And the holidays just wouldn't be complete without some pumpkin pie. We all know how wonderfully healthy pumpkin is for you so if you are avoiding sweets, this pie recipe is one you can certainly enjoy!
I use the Paleo Pie Crust recipe for this pie which only requires 4 basic ingredients and NO sugar! Believe it or not, it actually taste great! The pumpkin itself contains 4 grams of natural sugar and I added 1/2 cup of maple syrup to the mixture. So do the math...a pie very low in sugar.

1 3/4 cup pumpkin purée or 1 (15oz) can of pumpkin
1/2 cup full fat coconut milk
1/2 cup maple syrup
1 Tbs vanilla extract
1 Tbs fresh grated ginger or 1/2 tsp ground ginger
1 1/2 tsp ground cinnamon
1/2 tsp ground nutmeg
1/8 tsp ground cardamom
1/4 tsp sea salt
Paleo Pie Crust or crust of your choice
1. Make Paleo Pie Crust (the crust and pie filling will bake at the same time) or use crust of your choice.
2. Lightly grease a pie plate with some coconut oil. Preheat oven to 350°F.
3. Mix all ingredients in a medium bowl until nice and smooth. Pour the mixture into your pie crust and bake for about 1 hour. The top of the pie should be firm when done. Allow the pie to cool for about 20 minutes and then transfer to the refrigerator for about 2 hours for further setting. Serve and enjoy!
