Okay, we all know I’m obsessed with blood oranges. They are the rockstar of citrus as far as I’m concerned! Their vibrant color, natural beauty, and stand-out flavor sets them apart from the rest.
So I really wanted to share with you one of my favorite ways to enjoy this delectable fruit. You literally only need TWO ingredients! That would be blood oranges and chia seeds. Adding a sweetener, such as maple syrup, is completely optional and greatly depends on the flavor of your citrus, and of course your sweet tooth preference.
I love adding this to my morning oats. Spreading it on your weekend stack of pancakes or waffles is always a fabulous option. Or, if you are looking for a quick and satisfying snack, spread this jam over a slice of toast. Sourdough is amazing!
2 cups segmented blood oranges
2 tablespoons chia seeds
maple syrup, to taste (optional)
1) Segment the blood oranges. Put them in a medium pot and cook them over medium-low heat for about 10 minutes, stirring occasionally.
2) Remove from heat. Using an immersion blender, blend until the blood oranges reach a smooth consistency. Adding maple syrup is completely optional. Much of that depends on the natural sweetness of your blood oranges, along with your sweet tooth preference. So stir that in if using. I would think one tablespoon would be plenty. Then, stir in the chia seeds.
3) Pour the chia mixture into a glass jar or container and place it in your refrigerator for about 1 hour, or until thickened.
4) Dollop on toast, pancakes, waffles, oatmeal, etc.
